Oreo cupcake heaven!





I had a mini bake off last weekend because I got inspired by Tanya Burr and her Oreo cupcakes.
Let me tell you one thing: HEAVEN! I scored big time with these cupcakes! 
The color isn't the most apeeling that excist but the taste makes you forget about that.
You just know you need to try this yourself, here's the recipe:

INGREDIENTS

For the cupcakes:

175g butter
165g caster sugar
3 eggs
40g cocoa powder
125g self raising flower
1 tsp baking powder
1 pack oreos


For the frosting:

2 packs oreos
100g butter
200g icing sugar

Set the oven to a180 degrees celsius. Prepare your cupcake tins by puttin in the cupcake papers. Mix your butter and sugar until a smooth mixture. Next step is adding the eggs to the butter and sugar mixture, whisk this all in. Last but not least, add all your dry ingredients (cocoa powder, flour and baking powder). Pop a whole oreo into the bottom of each cupcake paper. Then before putting them in the oven scoop the mixture into your cupcake papers on top of the oreo, fill the papers almost to the top. Time to bake!  put them in the oven for 14-17 minutes (it depends on how fast your oven cooks your cupcakes !)

Whilst your cupcakes are in the oven, you need to make the frosting. Mix your butter and icing sugar together (make sure the butter is on room temperature!) with a wooden spoon into a soft buttercream (this takes a while and at some points it looks like there just isn't engough butter. DO NOT AD EXTRA BUTTER. You'll see it will all turn out fine). Then you need to crumb up half a pack of oreo's (I used a kitchenrobot to help me with this). Stir your oreo crumbs into your buttercream and there you have your oreo frosting!

Once your cupcakes are completely cooled down you can spoon on your frosting and for a finishing touch, break an oreo in half and push it on top.

And then the best part: you can eat them! :-)
